Tips
1. Remove fat under the skin or you can remove the excess oil after stewing. Although this oil is greasy, it is aroma for stir-frying. Collect it for cooking if you desire.
2. Boil chicken before stewing to remove the blood and bad taste.
3. Stew for 1-2 hours to make soup flavorful. Although the chicken is tough, the soup is great for blanching every hot pot ingredients.
